There are many different ways to say good bye in German, but it's not as complicated as greetings.

Formally
Auf Wiedersehen
at the telephone: Auf Wiederhören (less used nowadays)

Informally
Tschüss, Tschüs, Tschö, Tschau, Ciao
Servus (originally from Wien/Vienna, but now also used in Germany)

And various ways involving the time when you will see each other again:
Bis dann, Bis bald, Bis später, Bis morgen, Bis Freitagabend, Bis nächste Woche, Bis zur Konferenz, Bis irgendwann...

Of course there are regional variations:

Schwäbisch/Swabian (spoken in eastern Baden-Württemberg and south-western Bayern/Bavaria)
Ade [a'de:], sometimes with a diminutive Adele [a'de:lə]

Bairisch/Bavarian (spoken in southern Bayern/Bavaria and in Austria)
Pfüati/Pfiati, Pfüat/Pfiat (di/eich/euch)

Switzerland
Uf Widrluaga (luaga = to see, to look [same root?])
Uf Widrloosa (on the phone; loosa = to hear, to listen [same root?])
