An adjective is a word that tells us what a noun is like or could be like:

Maðurin er stórur - The man is big
Konan er stór - The woman is big
Barnið er stórt - The child is big

The adjective describes the noun

Adjectives are conjugated in:

numbers:

ein stórur maður (a big man)
fleiri stórir menn (many big men)

cases:

ein stórur maður sat har - a big man sat there
eg sá ein stóran mann - I saw a big man
eg møtti einum stórum manni - I met a big man

gender:

ein stórur maður - a big man
ein stór kona - a big woman
eitt stórt barn - a big child

declension:

stórur - størri - størstur = big - bigger - biggest (m)

To find out if a word is an adjective, it can be placed between the articles ein or eitt, hin or hitt and a noun.

ein grønur bilur = a green car
hin grøni bilurin = the green car
eitt frálíkt kvøld = a magnificent evening
hitt frálíka kvøldið = the magnificent evening

Like nouns, adjectives are conjugated according to two main conjugations: the strong and the weak conjugation.

Adjectives are strongly conjugated when the noun is indefinite:

ein sjúkur maður = a sick man
ein sjúk kona = a sick woman
ein sjúkt barn = a sick child

Adjectives are weakly conjugated when the noun is definite:

hin sjúki maðurin = the sick man
hin sjúka konan = the sick woman
hitt sjúka barnið = the sick child

or otherwise definite:

gamli Andras = old Andras
Eirikur Reyði = Eric the Red
