Confusing
Ok, if you're going to go all out with the use of traditional grammatical terms, you should go all the way. Once one gets simple conjugation down explaining how to attach a 助動詞 is as simple as telling them to what conjugation it attaches and how the 助動詞 conjugates itself.
If you're not going to go that far (and for beginners, I'd highly recommend you not), I'd stick to very simple grammatical explanations without using any of the traditional Japanese grammar terminology.

The differences
The only thing that adds any real difficulty to modern Japanese grammar is that it has become inconsistent as the language has developed over 1500 years or so. While not having nearly as many as English, Japanese has several special cases where it keeps the usage seen in Classical Japanese with a few specific words.
